OUR VINEYARD
THE FAMILY ESTATE
In the heart of the Côte des Blancs, the Paul Michel estate stretches over 20 hectares, mostly across Cuis Premier Cru and Chouilly Grand Cru. This is Chardonnay country — a mosaic of soils and exposures that reveal the grape’s most refined expressions.
Every vine is cared for with the utmost attention to health and balance. During harvest, the team hand-selects the finest clusters directly in the vineyard to ensure purity and precision in every wine.
Among the estate’s most celebrated sites are La Cruotte and Plume-Coq. La Cruotte, a historic 2-hectare vineyard, is prized for its perfect ripeness and controlled yields. Plume-Coq, in the Grand Cru of Chouilly, faces south and catches a lively breeze said to “pluck the roosters,” giving the grapes an early, graceful maturity.
Deeply rooted in their land, the Michel family practices responsible, sustainable viticulture and proudly carries the Sustainable Viticulture in Champagne certification.
CHOUILLY GRAND CRU: RICHNESS AND EARLY MATURITY
In Chouilly, our vines draw their strength from pure chalk topped with a whisper of soil. The site’s ideal exposure and gentle breeze create perfect conditions for healthy, early-ripening grapes.
This terroir gives wines of generous structure and expression — Chardonnays that balance depth with radiant energy.
CUIS PREMIER CRU: FRESHNESS AND FINESSE
In Cuis, our vines grow on similar chalky soils, but their northern exposure changes everything.
Ripening comes later here, often among the last to be harvested. The cooler slopes yield Champagnes of crystalline freshness, with delicate aromas and finely etched elegance.
